Chickpeas and Poached Eggs

Ingredients :

  • 2 cups plain greek yogurt
  • 1 lemon
  • 1 cup chickpeas rinsed
  • 1 tablespoon za’atar seasoning
  • 2 cups fresh spinach
  • 2 tablespoons olive oil divided
  • 4 fresh large eggs
  • pink sea salt for finishing

Directions

  1. In a medium mixing bowl, blend together yogurt, juice and zest from one fresh lemon.
  2. In a medium skillet, heat 1 tablespoon olive oil. Add chickpeas and za’atar seasoning. Stir until seasoning is evenly damp and chickpeas are warm. Transfer to a bowl, set aside.
  3. In the same skillet, add remaining olive oil and spinach, toss until wilted and the remove from heat.

  5. To plate, spoon yogurt mixture on the bottom of your serving plates,evenly divide chickpeas and then spinach, topping with 2 poached eggs each and finishing with a sprinkle of pink sea salt.
