Skinny Slow Cooker Gumbo
A healthy alternative to the high-calorie gumbo that will settle your craving without the guilt. Add rice, okra, and shrimp if you like. Serve over cooked brown or white rice.
Ingredients :
- 2 pounds skinless, boneless chicken thighs, cubed
- 2 (14.5 ounce) cans stewed tomatoes
- 1 pound turkey sausage, casings removed and crumbled
- 1 (14.5 ounce) can reduced sodium chicken broth
- 1 large onion, chopped
- 1 green bell pepper, chopped
- 3 cloves garlic, minced
- 1 tablespoon cajun seasoning
- ¼ teaspoon cayenne pepper
- ¼ teaspoon ground black pepper
Directions
- Combine chicken thighs, tomatoes, turkey sausage, chicken broth, onion, green bell pepper, garlic, Cajun seasoning, cayenne pepper, and ground black pepper in a slow cooker. Stir together to combine.
- Cook on Low until flavors are blended, about 6 hours.
