Western Egg Muffins
Who doesn’t love eggs, ham, and cheese all combined into a yummy portable breakfast?! When you find out how easy Western egg muffins are to make, you’ll be head over heels for them!
Ingredients :
- 16 slices honey ham , thinly sliced
- 8 eggs
- 1 cup sharp cheddar cheese , shredded
- 1/3 cup green bell pepper , minced
- 1/3 cup red bell pepper , minced
- 1/3 cup onion , minced
- cooking spray
Directions
- Preheat oven to 350 degrees. Line 8 muffin tin molds with squares of parchment paper. Coat lightly with cooking spray.
- Use 2 slices of ham per tin, overlapping them to form a cup liner, much like a cupcake liner.
- Sprinkle a pinch of cheese, green pepper, red pepper and onion into the wells of each muffin mold.
- Crack and pour one whole egg into each of the 8 muffin molds.
- Top with a pinch of green pepper, red pepper and onion (no cheese just yet).
- Bake for 10-12 minutes. Remove and top with cheddar cheese. Return to oven for 3-5 minutes or until cheese it melted, egg whites are no longer opaque and yolks are your desired runniness.
